Pimento - Jamaica Pepper (Pimento Officinalis)

Category Spice

Spicy hot, pepper, cloves, nutmeg and cinnamon.

Mostly produced in the West Indies, especially Jamaica (hence the name). Berries can also be distilled in Europe and the United States.
The essence drawn from the berries is also marketed under the name allspice.

Pimento essence is obtained through steam distillation of the leaves and the dried unripe berries when the tree is still green.
The fruit ripen between March and September.

Pimento essence is used to alter the notes of spicy perfumes for men and women.
Used to season game, liqueurs, fish, cakes, marinades and condiments.

Christopher Columbus introduced pimento essence in Europe.
The Aztecs used berries to flavour chocolate.
French army soldiers under Napoleon slid pimento in their boots to keep their feet warm during the Russian retreat.

Pimento has narcotic and digestive properties.
