Red currant is a small berry that grows in bunches on red currant bushes, which are 4 to 6 feet tall. There are red, white and black currants; these last are also called cassis, as in the famous crème de cassis.

The scent of red currant is reproduced by perfumers in the laboratory.

Red currant is used principally in women’s fragrances. It brings floral perfumes a lively tart, fruity note.

Red currant has a green, tart taste: it can be eaten raw, or made into a bright-red jelly or sauce.
