Cherry is the fruit of the cherry tree, in the rosaceae family. Native to Asia Minor, it is grown on several continents, principally Asia, Europe and North America. There are many different varieties of cherry; their fruit ranges from palest pink to black. Certaines varietes of cherry tree do not bear fruit.

No essential oil can be obtained from cherries. Their scent is reproduced in the laboratory by combining different molecules. Benzaldehyde, with a powerful almond odor, for example, lets you recreate the cherry-pit note.

Cherry is used in both fine fragrances and for more workaday uses. It brings a fruity touch that ranges from almondy to tart. In fine fragrance, the most popular cherry notes are Morello and Amarena.

The cherry-blossom note is also widely used in fine fragrance. In Japan, celebrating cherry-blossom season is a time-honored tradition, a cultural occasion bordering on the sacred.
